Chocolate Chip Snickerdoodle Muffins

Description

Chocolate chip snickerdoodle muffins are great anytime- breakfast, brunch or an after school snack!


Ingredients

  • 1 cup brown sugar
  • 1 cup oil
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 tablespoon ground cinnamon, divided
  • 1 teaspoon ground nutmeg
  • 2 cups buttermilk
  • 2 cups chocolate chips
  • 1/4 cup granulated sugar

Instructions

  1. Preheat oven to 350F degrees.
  2. Line 2 standard 12-cup muffin tins with paper liners.
  3. In a large bowl, combine flour, baking soda, salt, 2 teaspoons cinnamon, and nutmeg.
  4. In the bowl of a stand mixer, combine brown sugar and oil. Mix until combined. Add eggs, one at a time, and mix thoroughly. Add vanilla.
  5. Add dry ingredients, alternating with buttermilk, and mix just until combined. Stir in chocolate chips. Divide batter into the pans to make 24 muffins.
  6. In a small bowl, combine 1/4 cup granulated sugar and 1 teaspoon ground cinnamon. Sprinkle cinnamon-sugar mixture evenly over the muffins.
  7. Bake muffins in preheated oven for 18-22 minutes until puffy, golden and cooked through. Remove from oven and cool completely.
