Grilled Naan Pizza with Summer Veggies and Turkey Sausage


Ingredients

  • 2 fully cooked links of Italian style turkey sausage
  • 1 medium zucchini cut into thin slices
  • 1/4 red onion, thinly sided
  • 20 cherry tomatoes, halved
  • 6 tablespoons goat cheese spread
  • 1/4 cup shredded mozzarella cheese
  • kosher salt
  • olive oil
  • 2 pieces naan bread, whole wheat or white

Instructions

  1. Preheat grill to medium-high heat. Grill the turkey sausage until browned on all sides and heated all the way through. Throw the sliced zucchini on the grill for the last minute or two of cooking. Remove them both from the grill and set aside; turn the grill down to medium heat.
  2. Brush one side of naan bread with a touch of olive oil and place onto hot grill rack. Grill for 1-2 minutes until bread has light grill marks and is slightly crisp. Carefully take off grill and set aside, grill side up.
  3. Sliced turkey sausage into 1/8-inch slices.
  4. Spread 2-3 tablespoons of goat cheese spread on to each of the grilled sides of naan. Top with sliced, grilled turkey sausage, grilled zucchini, sliced onion and halved cherry tomatoes. If desired sprinkle with freshly grated parmesan cheese.
  5. Carefully place naan back on hot grill and turn heat down to medium-low. Close grill and let cook for no more than 5 minutes, checking for melting cheese and taking care not to burn the bottom.
  6. When cheese is melted, take naan off grill, slice into six pieces and serve.
