It’s Friday!
It’s a four day weekend!
It’s raining………..
The windy and temperamental weather that Utah is expected to get this weekend is not deterring us from firing up the grill and ringing in the summer with a bang. We were supposed to go camping with friends but plans changed and were sticking close to home. It will be a chance to get some yard work done and try some new recipes. If you’re looking for some inspiration in the food category, I’ve got you covered this weekend. Here are a few of my favorite summertime eats.

  • Otherwise known as 5 Minute Salad and Millon Dollar Salsa. This is the easiest and best salsa to serve at a large gathering. All you need are some tortilla chips!

  • This sweet and savory marinade is my go to when I’m grilling chicken and vegetable kabobs. It’s ease can’t be beat the the flavor is awesome!

  • Vegetarians and meat lovers alike will love these meaty mushroom burgers. Marinated in balsamic, the mushrooms are grilled and topped with fresh mozzarella, homemade basil pesto and sliced tomato.

  • This is a great salad to make ahead of time, the flavors only get better as it sits. Loaded with chopped veggies and drained canned chick peas, this salad is one of my favorite side dishes to serve with grilled dishes.
