Peaches and Cream Breakfast Tacos

Description

Baked cinnamon-sugar tortillas with greek yogurt and sliced peaches.


Ingredients

  • 4 flour tortillas (or spelt or gluten free)
  • 2 tablespoons melted butter
  • 2 tablespoons sugar
  • 1 teaspoon ground cinnamon
  • 1 cup Greek yogurt (vanilla or plain)
  • 2 peaches, pitted and sliced

Instructions

  1. Preheat oven to 375F degrees.
  2. Mix sugar and cinnamon together in small bowl.
  3. Place tortillas on a baking sheet and brush one side of the tortillas with melted butter and sprinkle with cinnamon sugar mixture. Flip over and do the same to the other side. Bake in a preheated oven for 12-15 minutes until tortillas are crispy at the edges but still a little soft in the center.
  4. Let cool for 5 minutes before spreading each tortilla with 1/4 cup of yogurt and 1/2 a sliced peach. Fold and devour!
