Ingredients
- 8 oz cooked shrimp, diced into bite size pieces
- 1 cup diced fresh pineapple
- 1/4 cup diced red bell pepper
- 1 finely diced hot chili pepper (optional)
- 1/4 cup fresh cilantro
- 3 tablespoons lime juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- tortilla chips for serving
Instructions
- In a small bowl, combine chopped shrimp, diced pineapple, minced bell pepper and chili pepper if using, fresh cilantro, lime juice, kosher salt and cumin.
- Toss to combine, cover with plastic wrap and let marinate in fridge for 1 hour before serving.
- Serve with tortilla chips for dipping.
