Pineapple-Shrimp Salsa


  • Yield: about 2 cups 1x

Ingredients

  • 8 oz cooked shrimp, diced into bite size pieces
  • 1 cup diced fresh pineapple
  • 1/4 cup diced red bell pepper
  • 1 finely diced hot chili pepper (optional)
  • 1/4 cup fresh cilantro
  • 3 tablespoons lime juice
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground cumin
  • tortilla chips for serving

Instructions

  1. In a small bowl, combine chopped shrimp, diced pineapple, minced bell pepper and chili pepper if using, fresh cilantro, lime juice, kosher salt and cumin.
  2. Toss to combine, cover with plastic wrap and let marinate in fridge for 1 hour before serving.
  3. Serve with tortilla chips for dipping.
