Salted Whole Wheat Chocolate Chunk & Toffee Cookies


Description

A whole wheat cookie with dark chocolate chunks, toffee bits and sea salt.


Ingredients

  • 1 1/8 cup whole wheat pastry flour
  • scant 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) butter, softened
  • 1/4 cup granulated sugar
  • 1/8 cup brown sugar
  • 1/2 teaspoon pure vanilla extract
  • 1 egg
  • 3 1/2 oz dark chocolate bar, cut into 1/4– inch chunks
  • 1/4 cup toffee chips
  • sea salt for garnish, optional

Instructions

  1. Preheat oven to 350F degrees.
  2. In a small bowl, combine flour, baking soda and salt; set aside.
  3. In a medium bowl, beat butter and both sugars with a hand held mixer until light and fluffy, about 3 minutes. Add vanilla and egg. Blend just until combined.
  4. Add dry ingredients and blend until incorporated.
  5. Stir in dark chocolate chunks and toffee chips.
  6. Drop cookies by the tablespoon full onto a baking sheet lined with a silicone baking mat or parchment paper. If desired, sprinkle with a pinch of sea salt. Bake in preheated oven for 10-12 minutes until done. Remove from oven and transfer cookies to a cooling rack to cool completely.

This recipe has been modified and test in my high altitude kitchen which sits just below 7000 feet.
