I have been experiencing the winter blues this past week. And not because I’m lacking vitamin D or because I need spring to get here. It’s actually the opposite. I’m having a case of snow deprivation. It’s a real thing, I can assure you. I haven’t had a full blown powder day in over a month and it’s starting to make me squirm. Mother Nature, if you can here me: SEND MORE SNOW STAT. AND BY SNOW, I MEAN THE BIGGEST DUMP YOU’VE GOT.

It’s been snowing everywhere but here. Atlanta. The midwest. Up and down the east coast. It seems that everyone is having their fill of snow days but us. And for the record, when it snowed in Atlanta, my heart literally broke in two. Atlanta, really? It’s not right. We’ve have little storms followed by warm weather that results in heavy snow or rain melting what little snow we got. I’ve had enough. It’s time for a certified dump. and it can’t come soon enough. Supposedly we’re in for a little something this weekend but I’m trying not to get my hopes up too much in the event we get rain again. My delicate nature can’t take it. No, really, it can’t.

It did snow a few inches last night so it’s a good start. My driveway is covered in an inch of white stuff and my insides are starting to get excited. We’ve got friends in town and I’m headed to the mountain bright and early this morning. The forecast is calling for fluffies all weekend. I’m crossing my fingers, saying a prayer and doing my snow dance. Let’s hope it works. Mountain Mama needs to let loose. I don’t mean to sound dramatic but I won’t be right until I get the goods. I need it to set me straight.

So these granola bars. What can I say. I’ve been digging on the homemade bars this winter and they’ve been a great snack for stuffing in my pocket when I’m doing something outdoors. The kids are into them and I love that they’re full of the goods instead of processed junk. This weekend, they will either a) be my pocket snack when I’m riding the pow that I so desperately need or b) what I go for if it doesn’t snow. I can’t think of a better choice for “eating my emotions” than a few of these and a hot cup of tea. Let’s hope for option a.

Chewy Cinnamon Raisin Granola Bars


Ingredients

  • 1 2/3 cups gluten free oats
  • 1/3 cup gluten free oat flour (I just pulsed oats in the blender until I got a fine flour like substance)
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup raisins
  • 1/2 cup sliced almonds
  • 1/2 cup cinnamon chips
  • 1 teaspoon pure vanilla extract
  • 1/4 cup honey
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons melted butter
  • 3 tablespoons brown sugar
  • 3 tablespoons almond butter

Instructions

  1. Preheat oven to 350F degrees.
  2. Combine oats, oat flour, salt, cinnamon, raisins, almonds and cinnamon chips in a large bowl.
  3. In a small bowl combine vanilla extract, honey, olive oil, melted butter, brown sugar and almond butter; stir to combine and mix well.
  4. Pour wet mixture into oat mixture and stir unit the ingredients are mixed evenly.
  5. Pour oat mixture into a 8×8 baking pan that has been greased and lined with parchment paper. Press down.
  6. Bake in preheated oven for 25-30 minutes.
  7. Let cool and cut into 12 bars. Wrap individually and store in an airtight container for up to 4 days. You can freeze for up to a month.
