Blue Cheese, Pecan & Dried Cherry Drop Biscuits


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons sugar
  • scant 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 6 tablespoons (3/4 stick or 3 ounces) cold unsalted butter, cut into 1/2-inch cubes
  • 1 cup buttermilk
  • 1/3 cup crumbled blue cheese
  • 1/4 cup roughly chopped pecans
  • 1/8 cup dried cherries

Instructions

  1. Preheat oven to 450°F degrees.
  2. Whisk together flour, baking powder, sugar, baking soda, salt and pepper in a large bowl, then blend in butter with two forks or a pastry cutter until the mixture resembles coarse meal and butter pieces are the size of a small pea. Add buttermilk and stir until just combined.
  3. Stir in blue cheese, pecans and cherries just until mixed taking care not to over stir.
  4. Drop dough in 12 equal mounds about 2 inches apart onto a large baking sheet that has been lined with parchment paper. Bake 18-20 minutes until golden.
  5. Remove from oven, let cool slightly before serving with salted butter and local honey.
