Brownie Chocolate Chip Cookie Bars

Ingredients

For the cookie layer:

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/2 cup (1 stick) room temperature butter
  • 1/4 cup + 2 tablespoons granulated sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon pure vanilla extract
  • 1 cup chocolate chips or chocolate chunks

For the brownie layer:

  • 118 oz. box brownie mix + ingredients for making brownies
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon espresso powder
  • 1 teaspoon Maldon or other flakey sea salt, optional

Instructions

  1. Preheat oven to 350 F degrees.
  2. Mix flour, baking soda and kosher salt in medium bowl; set aside.
  3. Beat butter, granulated sugar and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add egg and vanilla; mix well.
  4. Gradually mix in flour mixture on low speed. Stir in chocolate chips; set aside.
  5. Prepare brownie mix as directed on package, adding  vanilla extract and espresso powder.
  6. Prepare a 13×9-inch baking pan with either butter and flour or use a baking spray with flour.
  7. Spread brownie batter into prepared pan and  bake 15 minutes.
  8. Remove brownies from oven and drop the cookie dough by the tablespoon full onto the partially baked brownie, covering the top evenly. It doesn’t need to be perfect as the cookie dough will spread during baking.
  9. Sprinkle the cookie dough with sea salt. Bake 20 to 25 minutes longer or until cookie top is golden brown.
  10. Remove pan from oven and cool in pan on wire rack until completely cool. Cut into into bars and devour.
