Lightened Up Buffalo Chicken Salad Sandwiches
Lightened up Buffalo Chicken Salad Sandwiches are made with Greek yogurt, diced chicken breast and stuffed into a 100% Whole Wheat Toufayan Smart Pocket. Healthy and filling, these buffalo chicken salad sandwiches are full of flavor, not overly spicy and a great make ahead lunch.
Summer is just around the corner. And with that comes longer days, impromptu barbecues and swimsuit season. Can you guess which I’m least excited about? I’ll give you a hint, it rhymes with fwimfuit. I know, I know… I’m not alone. The mere thought of getting into a swim suit right now terrifies me. I don’t know what I’m more scared of, getting in the actual bathing suit or exposing the pasty white legs that that will be poking out the bottom. At this point, it’s a toss up. Neither is particularly pretty right now.
Nothing a modest muumuu and a bottle of self tanner can’t take care of, right? That’s what I keep telling myself anyway. But since muumuu’s aren’t really my style, I think I’ll start eating a little lighter. It is the more sensible thing to do and if my mama taught me anything, it’s to be sensible. As I come out of winter hibernation mode, I lay to rest the heavy foods that have fed my body all winter and instead turn to lighter fare to keep me energized and hopefully looking good in a swimsuit next month.
I’ve always been a sucker for buffalo chicken wings (preferably in a dark bar with a cold beer) but we all know that too many wings is not really the recipe for feeling good in a swimsuit. Though it did seem to get me through college. This is my rendition of the beloved bar food but done in a healthful, guiltless way. Chicken salad is made with boneless, skinless chicken breast, lots of diced celery and red onion and a light buffalo sauce made with Greek yogurt instead of mayonnaise. It’s all stuffed into a Toufayan 100% Whole Wheat Smart Pocket and at only 80 calories, these are the perfect vehicle for the savory buffalo chicken salad.
A light (but totally satisfying) sandwich that you don’t have to feel guilty about means you’re one meal closer to rocking that two-piece. Like they say, winner, winner chicken dinner lunch. I’m afraid you’re on your own with the pasty white leg thing.
Lightened Up Buffalo Chicken Salad Sandwiches
- Yield: 4 servings 1x
Ingredients
- 1/2 cup plain Greek yogurt
- 1/4 cup buffalo sauce
- 1/4 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 2 1/2– 3 cups diced, cooked chicken breast
- 3/4 cup diced celery
- 1/4 cup diced red onion
- bibb lettuce or the like, optional
- Toufayan 100% Whole Wheat Smart Pockets
Instructions
- In a small bowl combine the plain greek yogurt, buffalo sauce, garlic powder, salt and pepper.
- In another bowl, combine chicken, diced celery, and red onion. Fold in the buffalo sauce/yogurt mixture until well combined.
- Divide the mixture between 4 Toufayan Smart Pockets and add lettuce if desired.

Just made this salad for lunch with a leftover rotisserie chicken from CostCo. It was yummy and healthy. I think my chicken was a bit dry, so next time I will make it with some chicken I have grilled myself. Thanks Kelly!
