Overnight Oats
This super simple and ultra filling breakfast is perfect before hitting slopes. The recipe for Overnight Oats was originally shared on the Epic Moms blog and you can find the recipe and details here.
Hope everyone is having a great weekend! It’s snowing here, cold as can be (like -3 cold) and aside from watching a dear family friend race in the World Cup bobsled competition this morning, we’re hunkering down and staying in. I think we’ll wait for the temperature to pick up a bit before we hit the slopes!
I’m excited to share my new writing gig with you as an official Epic Mom. Epic Moms is a Vail Resorts run blog written by moms for moms (and dads- we don’t discriminate!). It’s a space where I get to combine my two passions: snowboarding and food. I couldn’t be more thrilled. A few times a month, I’ll be sharing tasty recipes and tips for skiing/snowboarding with your family in and around the Park City area and Canyons Resort.
My first post is up and I’m sharing an incredibly easy recipe for overnight oats. Great for taking in the car on the drive to the mountain or for any busy morning when you need a filling breakfast that will take you through the day! If you can get behind eating cold oats, you’ll totally dig this recipe. You can find the recipe here.
Have a great weekend, everyone!! xo

No way! An epic mom (you totally are!)! Too bad my mom does not cook because she would be perfect the epic mom blog! So cool, Kelley!!
Love the oats and am headed to check them + the blog out!! Oh and it is freezing here in Frisco (right next toe Breck)) too!
How fun. We’ve sent plenty of money to Epic -family wise. I’m happy to see that someone can benefit! We spent a lot of years driving between Vail and Denver and sure could have used these oats. Breakfast burritos sufficed!
Congrats on embarking on new adventures. I love overnight oats, it is my new favorite way to eat oatmeal.
