Slow Cooker Cranberry Onion Pot Roast

Ingredients

  • 3 lb chuck roast
  • 12 tablespoons olive oil
  • garlic powder
  • onion powder
  • kosher salt
  • ground black pepper
  • 1/2 cup beef stock (or water)
  • 1 oz package of french onion soup mix
  • 14 oz can jellied cranberry sauce

Instructions

  1. Heat 1-2 tablespoons olive oil in a large sauté pan over medium-high heat. Season chuck roast liberally with garlic powder, onion powder, kosher salt and black pepper on all sides. Sear the roast in the hot pan on all sides just until brown.
  2. Transfer chuck roast to the base of a slow cooker.
  3. Add the beef stock (or water) to the hot pan and scrape up the brown bits. Pour over the chuck roast.
  4. Mix the cranberry sauce and onion soup mix in a small bowl; pour around the chuck roast.
  5. Cook on low 6-8 hours.
  6. Shred meat, mix into the sauce and serve over buttered egg noodles.
