Slow Cooker Sweet Pork Tacos
Can I get a hallelujah for a long weekend? We had a shortened school week last week I have to say it was absolutely glorious. I’m probably one of few mamas that gets excited when their kiddos are out of school but I genuinely love having them around; I soak up the extra snuggles and downtime. And I especially relish love that we get a few days off from rushed mornings, after school activities and homework. Read: we slept in and I don’t shoved those lunch boxes in the way back of the cupboard.

This weekend was all about hunkering down and taking it easy. I slept in and took the dogs for a hike. I canned 75 lb. of tomatoes with a friend. (While not super relaxing it’s something I genuinely enjoy doing and am beyond stoked to cross it off my list.) My hubby fit in a bike ride while I played tennis and the kids played at the park. I made cookies and we watched a movie on Netflix. I went to the Farmers Market yesterday and had a leisurely morning buying the last of the fall produce. We had a popcorn dinner (totally a thing) and carved pumpkins while watching Sunday night football. See? It was a near perfect weekend and totally what this burned out mama needed. I woke up today feeling like a rockstar. I got my workout done early, laundry is underway and dinner is in the slow cooker! Take that, Monday.
And speaking of dinner in the slow cooker, can we please talk about how awesome the slow cooker actually is? It is, hands down, the most beloved counter top appliance in my kitchen. And that’s saying a lot as my coffee maker and blender get a ton of play and used daily. But the slow cooker! It saves me time and time again on busy weeknights. It’s a one-pot clean up and you can’t beat that dinner-cooking-all-day-smell when you walk into your house after a long day. Can you tell I like my slow cooker?
Which brings me to todays recipe: Slow Cooker Sweet Pork Tacos. This is currently getting a ton of play in our house. We’ve made it twice in the last few weeks and I froze the leftovers which are so going to be enchiladas for dinner one night soon. If you’ve ever been to the popular chain, Cafe Rio, then you’re familiar with their Sweet Pork. This is my homemade version and if I do say so myself just a little bit better. It’s slightly less sweet and has the perfect little kick giving it just enough heat to balance the sweet.
Tacos, enchiladas, burrito bowls…..you name it, this pork is your answer. It’s also awesome reheated and eaten with eggs and a side of tortilla chips for a savory breakfast.
