Spinach Pesto

  • Yield: about 3.5 cups 1x


  • 3 cups lightly packed spinach leaves
  • 1/3 cup pine nuts
  • 1/3 cup parmesan cheese
  • 3 tablespoons lemon juice
  • 1/2 clove garlic, minced
  • 1/3 cup olive oil
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper


  1. In the base of a food processor, combine spinach, pine nuts, lemon juice and minced garlic. Pulse ingredients until spinach is chopped and ingredients are combined. With the machine running, add olive oil and mix until pesto is creamy. Add salt and pepper to taste.
