Vanilla Bean Olive Oil Bread


Ingredients

  • 2 1/2 cups  all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar
  • 2 eggs, lightly beaten
  • 3/4 cup milk
  • 1/2 cup vanilla bean infused olive oil (recipe below) OR 1/2 cup olive oil + 1/2 teaspoon vanilla bean paste
  • grated zest of 1 small orange or lemon (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Prepare loaf pan with either a non-stick baking spray or butter and flour.
  3. In a mixing bowl, stir together the flour, baking powder, and salt.
  4. In a separate bowl, mix the sugar, eggs, milk, and olive oil; beat well. Add lemon or orange zest if using.
  5. Fold the flour mixture into the wet mixture. Stir just until combined.
  6. Transfer batter to the prepared pan and smooth the surface. Bake for 50-55 mintues, or until a thin skewer inserted in the center comes out dry.
  7. Remove bread from oven and let cool for a few minutes. Unmold and cool on a rack completely.
  8. Serve warm or at room temperature.
