Vanilla Bean Simple Syrup

I’ve got a super simple recipe for you this weekend. It’s two ingredients (sugar and vanilla beans) + water (which is hardly an ingredient) and it honestly takes 2 minutes to make. This Vanilla Bean Simple Syrup has become a staple in our house and I’ve been making it weekly to sweeten my iced and hot coffee alike!
If you’re a long time reader of my blog then you know I’ve waxed on multiple times about my love of drinking my coffee lightly sweetened and with cream. As much as I’ve tried, I just can’t get behind a black cup of joe. I need a little love, you know? And because I (usually) only drink one jumbo mug in the morning, I don’t worry about the extra sugar. On those busy mornings I don’t get my morning cup or if it’s been an especially busy day, I’ll have an iced coffee mid day. And just like my morning cup, my iced coffee needs to be sweetened as well. I like what I like, what can I say?
Enter Vanilla Bean Simple Syrup. If you’ve ever tried to sweeten a cold brew or iced coffee with granulated sugar you know much it sucks. The sugar doesn’t dissolve so it’s usually an unsweetened iced coffee until you get to the very end where it’s an overly sweetened ice coffee. My favorite, local coffee shop serves a simple syrup next to the other sweeteners and it’s not only become my go go when I order an iced coffee drink but I’ve been using it for hot drinks too. I don’t use as much and it sweetens my coffee perfectly.
Why oh why have I not been making simple syrup at home before now?
You could certainly make this omitting the vanilla bean but it’s a lovely addition and what takes this simple syrup from good to great. While I primarily use if for my coffee, don’t overlook this syrup next time you need something to sweeten your cocktail. Let me just tell you that this syrup + orange flavored vodka + soda water + lots of ice and a lime wedge is off the charts tasty.

Can the vanilla bean be reused a few times, before losing flavor? Or, can the recipe be doubled with one bean? Sounds tasty, especially since vanilla flavored sugar doesn’t do much to flavor a big mug of joe – and I love vanilla! Thanks for your recipes!
I don’t use the vanilla bean more than once. With that being said, I don’t know why you couldn’t. I use them for years when I’m making vanilla bean extract. Give it a go!!!
