Ricotta Toast with Honey and Pistachios
Toasted seedy bread smeared with ricotta cheese, sprinkled with toasted pistachios, drizzled with local honey and finished with coarse black pepper and a sprinkle of salt is my new breakfast go to. If you’re smart, it will become yours too!
Can’t stop, won’t stop. For reals, this toast is amazing. I’m not sure why it’s taken me so long to jump on board with ricotta on toast but I say better late than never, am I right? For being a self proclaimed aficionado of toast, you’d think I’d had this tasty concoction before but alas it’s only been in the last month that I’ve been shoving my face with this sweet and savory combo. I pretty much have a piece of toast with coffee or tea every morning. I’m a creature of habit and it’s how I like to start my morning. Often it’s just butter and homemade jam, sometimes it’s avocado, lemon and salt but of late it’s been this Ricotta Toast with Honey and Pistachios.
It all started because I had a quarter full container of ricotta leftover from a lasagna I made for a catering job last month. It was staring me down every time I opened the fridge. You see, I have this phobia about letting good food go to waste and do my best to use up whatever I have. I’m great at recycling leftovers into something tasty! You hardly need a recipe for this as it’s simply ricotta, honey, pistachios, salt and pepper but hopefully the pictures and idea alone will nudge you into making it. Because I consider us friends and want to be totally honest here, I spread butter on my toast before I spread it with ricotta. Because, well….butter, duh. But don’t feel like you have to do that- I’m glutenous and really love butter so it’s a must for me. Do what you like and both ways are promised to be amazing.

- Yield: 1 slice toast 1x
Ingredients
- 1 slice seedy bread (or whatever kind you like!)
- 1 tablespoon butter (optional)
- 2 tablespoons whole milk ricotta cheese
- 1 heaping teaspoon local honey
- 1 tablespoon chopped pistachios
- kosher salt and coarse black pepper
Instructions
- Toast bread.
- Slather with butter if using and ricotta cheese. Sprinkle with pistachios, drizzle with honey and finish with a pinch of salt and pepper to taste.
- Devour.
Notes
These proportions are simply a guideline. Make it yours and enjoy!

This was sensational. Obviously this could not be an easier breakfast, although in our little family of two, the lily was gilded quite nicely this morning. I toasted slices of my Jim Lahey style of overnight slow risen bread…and then home made Ricotta. You’ve given me a new “go to” breakfast, not to mention stirring up a memory that feels so good in the soul cavity. I’m 59, and as a child, when sleeping over at my Grandma Belle’s, she would wake up to the same breakfast every day. She would turn egg bread into a type of melba toast, and then slather it with Ricotta, and then a spoonful of jam. Thank you for sharing this treat, for all of the above reasons.

Oh, my goodness. This is fantastic! I had some leftover ricotta, and I was looking up ricotta toast ideas so that I didn’t waste it. I’m so glad I found this. The flavors are not anything I would have thought to pair, but it is soooo good. I’m not a fan of very sweet breakfasts, so this hit the sweet/savory balance perfectly. Love that bit of black pepper. Really nice. Thank you for a great idea!
