Thai Chicken Wraps with Peanut Sauce

I jokingly wrote on my Facebook page last week that my kids didn’t get the memo that summer was supposed to be relaxing. Dudes! We’re only one week into summer, and I’m already hearing, “I’m bored!” My kiddos have asked me multiple times a day to take them places, play with them outside, set up lemonade stands, and my favorite- watch them do whatever it is they’re doing. While I promise I love my kids and am happiest hanging out with them, these kids need to get a grip. And a serious lesson in independence. Whatever happened to just playing outside? We’ve become such a scheduled society- even with playtime- and I’m kind of over it.
It’s partly my fault. I’m too willing to entertain them. We’ve fallen into the trap of having activity after activity planned and not so good and encouraging independent play. After having a few conversations with my husband about this, he totally agreed. We’ve got to stop entertaining our kiddos because it’s doing a disservice to them and driving us nuts! This summer we’re implementing some hardcore free time. And by that I mean for a certain amount of time each day, the boys PLAY ON THEIR OWN. As in, don’t ask me or your dad to participate or facilitate. Don’t ask for a play date or any kind of organized activity. Play outside and fend for yourself. AND?? You’re not allowed to tattle. Figure out whatever you’ve got to figure out together. And if that weren’t enough, we’re also taking 30 minutes of alone/quiet time each afternoon. You head to your room where you can read, draw, build, daydream, pick your nose….I don’t care. I just has to be silent and has to be solo.
Happy to report that so far so good. We’ve done it a multiple days in a row and while there were certainly complaints (and weird looks) the first few days, both the boys have been pretty much on board. I don’t want to jinx anything but they’re actually playing really well together too. Or maybe they’re not but since they’re not allowed to tattle or complain, I don’t hear about it. Either way, it’s pretty nice. And I already feel less stressed about not having to keep them busy! And just so you know, I realize that this could be very short-lived. At some point my kids will be hammering me to take them to the pool, the skateboard park, go for a bike ride and enroll them in summer camp. And while we’ll certainly make sure to schedule a few things and have some fun, we’re going to ride the independent play train as far as it will take us.
Plus, it means a quiet lunch and chance to read more than 1 page at a time for me. #winning š

Description
A chicken and veggie wrap drizzled with Thai peanut sauce!
Ingredients
peanut sauce:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon melted coconut oil
- 2 tablespoons honey
- 1–2 tablespoons water (as needed to thin)
for the wraps:
- 1/2 cup shredded cabbage or coleslaw mix
- 1 teaspoon rice wine vinegar + pinch of sugar
- 1 tortilla or your favorite wrap
- 1/4 avocado
- 1/4 cup cooked, sliced chicken
- 1/4 cup shredded carrots
- fresh cilantro
- sesame seeds, optional
Instructions
- To make the peanut sauce, put all the ingredients minus the water into a blender and pulse to combine. Add water as needed until you get a smooth, pourable consistency. Set peanut sauce aside.
- To make wrap, combine cabbage or coleslaw mix with pinch of sugar + rice wine vinegar in a small bowl.
- Lay one tortilla on the counter. Smear with avocado. Layer with chicken, cabbage, carrots and fresh cilantro. Drizzle with peanut sauce and sprinkle with sesame seeds if using.
- Wrap up and enjoy!!

yesssssss. I’m a longtime fan of the thai chicken tacos, so this is an awesome alternative for a quicker lunch with less prep! you’re awesome.
With 2 boys, I can relate on so many levels! Love the 30 min quiet time idea….totally stealing it! Making the wraps this week too!
