I’m not really one for making New Year’s resolutions. Too much pressure for my personality. I feel like resolutions are so concrete. It’s a black and white approach to “doing better” and one that just doesn’t add up in my world. If I don’t end up following them through fully (which is just about always), I end up feeling guilty and bad about myself. Not how I want to start the year, you know? I do, however, love the idea of a new anything, a clean slate if you will. Each year end, I reflect on the past year and how I’d like to make the new year better for myself and the people around me. I don’t do it through a deliberate act but rather by being more conscious of where I am in my life and how I can make me a better me to move through the new year. Corny, perhaps, but somehow it works for me.
When I asked on my Facebook page what people wanted to see on Mountain Mama Cooks for the New Year, I got a lot of requests for “skinny” recipes. I know that many of you have vowed to make this new year one of eating healthier and exercising more and while I tip my hat and commend what you are doing, my blog and the recipes will stay the same. I will focus on what I always have and that is giving you real food and a whole lot of moderation. You’ll always find a myriad of recipes on my blog that range from healthy to indulgent, gluten free to gluten laden, naturally low fat and naturally full of fat and just about everything in between. Like resolutions, I don’t adhere to the all or none philosophy. Eat consciously and exercise regularly as a lifestyle and come New Year’s, you can put your resolution focus on something more fun like reading more books or snowboarding more! (Forget what I said above about resolutions. Snowboarding more is SO my New Year’ resolution.)
Now that I’m off that bandwagon, let’s talk soup, shall we? I used to work in a small mom and pop restaurant that served 2-3 homemade soups daily. One of my all time favorites was one affectionately named, Ski Soup. Similar to a goulash it’s chocked full of ground beef and/or Italian sausage, lots of vegetables, a sweet and savory broth and some sort of pasta to give it some girth. It’s the most warming, filling soup and perfect for having on a cold night after you’ve spent a day on the mountain, trying to stay warm. Served with some crusty garlic bread and a glass of red wine, this would be just what I wanted to end my day with after a day of snowboarding.
The soup is super versatile and you could use whatever vegetables- fresh or canned- that you have on hand. I stock my pantry with Del Monte® veggies and tomatoes this time of year when fresh produce is slim pickings. The fruits and vegetables are picked and packed at their prime and most are canned almost immediately, locking in the nutrition and vitamin content. I appreciate that Del Monte offers so many no-salt and reduced sodium canned vegetables as I prefer to add my own salt especially when making something like a soup as I can control the sodium. The soup is super hearty thanks to browned Italian sausage and whole wheat elbow macaroni. The secret ingredient is apple cider vinegar that you stir in at the end. It might sound strange but I promise you it works!

PrintSki Soup + $100 Visa Card Giveaway
Ingredients
- 1 lb Italian Sausage
- 1 small yellow onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 medium or 2 small zucchini, diced
- 2 cloves garlic, minced
- 1 1/2 quarts chicken stock
- 1 14-oz can Del Monte petite diced tomatoes
- 1 14-oz can Del Monte cut green beans, drained
- 1 14-oz can Del Monte sweet yellow corn, drained
- 1/3 cup apple cider vinegar
- 6 oz whole wheat elbow macaroni
- salt and pepper to taste
- parmesan cheese for garnish, optional
Instructions
- In a large stock pan, brown sausage, breaking up any large pieces until fully cooked. Remove sausage from pan and drain on a plate lined with a few paper towels. Drain off all but 2 tablespoons of the fat from the stock pan and return to stove top.
- Add the diced onion, carrot and celery to the pan. Cook over medium-low heat until softened about 5-8 minutes. Add the zucchini and garlic and cook 2-3 minutes more.
- Add chicken stock, tomatoes, green beans and corn. Bring to a boil and then turn heat to low and let simmer 10 minutes.
- Add apple cider vinegar, macaroni and cooked sausage. Cook for 10 minutes or until pasta is cooked through. Season with salt and pepper. Serve soup in bowls with parmesan cheese to garnish if desired.

Favorite items to stock are: Diced tomatoes, garbanzo beans (really any sort of beans) and diced pineapple (to eat with cottage cheese)

I always have chick peas, black beans and canned corn. I have this great vegetarian soup recipe (although I’m not a vegetarian).
I always have butternut squash and sweet potatoes
I always have canned tomatoes, tomato sauce, corn and beans (green, black, pinto, northern, garbanzo, etc). I make chili from all of the above with some ground beef. Or I make a noodle casserole with ground beef, cream of chicken soup, cheese soup, corn, green beans, cream corn, any noodles I have and topped with tater tots.
My favorite can of veggies to stock in my pantry is Mexicorn! I use it for my infamous Southwest Corn Dip recipe that is very, very addictive. Always have Mexicorn on hand if I ever need to whip it up for guests.

Frozen broccoli is always around. I keep it simple – toss it in garlic olive oil and a little bit of lemon pepper and then roast until crispy and caramelized.

Diced tomatoes! You can add them to practically anything. Add some seasonings to make salsa, throw it in rice, ANYthing!

I always have for canned green beans (my husband and I eat them allllll the time!) corn, and every now and then some canned mixed veggies. I love canned peaches, and canned pineapple! I don’t even have recipes for them, I just love to eat them all plain! but every now and then I will use my pineapple on pizzas, cause ham & pineapple pizza is my favorite kind! My eating philosophy is much the same. I am totally a moderation girl, and I don’t do well with trying to change everything in one big go!! This soup looks amazing, though, and I’m wishing I had a big bowl of it for dinner tonight!
We eat a lot of peas, corn. and green beans. I love the “Skinny” brand of canned fruit. I like any kinds of fruit. Peaches, Pears, or Mandarin Oranges are the top ones.

I always have pineapple…A good roast is always wonderful in the crockpot.
Like you a keep a good assortment of tomatoes, fruits, and vegetables stocked in the pantry but a must have to keep on hand is creamed corn. One thing that I love to treat myself is cornbread made with equal parts cream corn and sour cream. It is so moist it is similar to cake in consistency.
My favorite fruits and vegetables to have in stock are sweet potatoes, blueberries, sweet cherries, tomatoes, and peppers. 🙂

I love all veggies!!! Pantry staples: diced tomatoes, pineapple, black beans, applesauce! Black beans are great for tex mex dishes (tacos/quesadillas,burritos, etc)…throw them on some tortilla chips with cheese and broil for a few mins then dip in salsa, guac and/or sour cream! YUM! Instant nachos!

salt, pepper, or montreal steak seasoning to taste
Serve chunky pr put in blender to make smooth salsa.

I always have all types of tomatoes – diced, crushed, sauce… They make a great quick pizza sauce or spaghetti sauce. I also always have canned peaches (for peach puff pancake.) Raisins and pineapple are also always in the pantry along with green beans.

Cream style corn & diced green chilies are staples in my pantry because they’re key ingredients in our favorite Southwest Egg Bake. It’s one of my go-to meals to share & celebrate the arrival of new babies!

I ALWAYS keep canned diced tomatoes, canned diced tomatoes with basil garlic and oregano, French style green beans, corn, and sliced potatoes on hand! The potatoes make a great base or add in for sausages and meats, and the diced tomatoes are wonderful in casseroles or with pasta! 🙂

My favorite fruits and vegetables are tomatoes, corn, tomato sauce and paste, apricots, pineapple. OK there are too many to mention. Enjoy them all.
I ALWAYS have tomatoes, peaches, corn, green beans, onion, carrots, celery and potatoes for vegetables! My favorite soup is:
Knefla Soup
6 potatoes, peeled and cut into bite size
2 onions, chopped
1 carrot, pared and sliced
1 stalk celery, sliced
4 chicken bouillon cubes
1 T parsley flakes
5 cups water
1 t salt
Pepper (to taste)
1/3 cup butter
1 can evaporated milk
Combine all ingredients but milk in large kettle and simmer until vegetables are tender. Add knefla. Simmer 30 minutes. Add evaporated milk just before serving.
Knefla:
2 cups flour
1 egg
1 t salt
1 cup milk
Mix and form into long strips. Cut dough in small pieces.

Tomatoes of course! You can make almost anything with them – Italian, Mexican, American. I keep diced tomatoes, RoTel style, tomato sauce, chili style tomatoes…I think you get the idea. My favorite thing to make with tomatoes is chili. Beans are 2nd on the list (thus the chili).

I always have applesauce and homemade canned tomato sauce and salsa. We also always have plenty of sweet potatoes from our garden 🙂 as well as fruit.
Del Monte green beans of course; my boys love the tator tot hot dish and the green bean casserole.
I don’t really stock my pantry with much in the way of veggies, I prefer to prepare fresh and stock frozen — but I do have diced and stewed tomatoes, whole potatoes, and sauerkraut.
No one recipe for all of that, but I do like to make taco’s, chili and meatloaf with the tomatoes.

1 package tortelini, 1 package spinach, 1 box chicken broth, parmesan cheese, 12 turkey meatballs (thawed). Boil broth; add tortellini… when 3 minutes left, add meatballs, then when 1 minute left add spinach. Add some parmesan cheese and pepper. QUICK and delicious soup!

I always have canned tomato bits and green beans on hand, but during the winter months when I crave summer fruit, I especially like fruit canned in 100% juice, such as peaches. I will make fruit turnovers by draining and retaining the juice from 2-3 cans of peaches into a saucepan. I’ll then add cornstarch, some sugar, seasoning such as cinnamon and a little lemon juice and cook that till it thickens. Remove from heat and
add the reserved fruit, stirring to coat. Have your favorite pie dough rolled out and cut into squares, then place an appropriate amount of fruit on the square and fold over and crimp. I bake these at 400 degrees for about 30 minutes. Delish!

Finally tried this soup this week (yes, it’s still cold enough to be eating soup) and was really surprised by how flavourful it was. I ended up making a homemade version of italian sausage, as I’ve never been impressed with the brand at my grocery store, and really loved it. Will be adding it to the winter rotation for next year. Just wanted to let you I’ve got this on the stove right now. I didn’t have any celery or zucchini, but it still smells delicious!
