Gluten Free Fudgy Brownies
Rich, fudgy chocolate brownies get an extra pinch of love with dark chocolate chunks and a sprinkle of sea salt. You’d never know these were gluten free and it doesn’t even matter; these are Out. Of. This. World.
Sometimes you just need something dark and chocolatey.
Like every afternoon.
I’m predictable like that. I crave something sweet around 2 o’clock most days. Sometimes I’ll grab an apple and go for a walk but more times that not, I give in and have a little something more. If I’ve planned my day out right, I’ve allowed 5-10 minutes to make a cup of tea too and then I sit down with whatever the homemade treat of the day is and enjoy it the right way.
I don’t stress over my diet. I do (or at least attempt) to do a cleanse once a year but otherwise I try to keep everything in check by eating consciously. And by that I mean eating what’s in season, including a lot of veggies and fruit into my diet, eating locally when it’s available and avoiding packaged foods at the grocery store. I would say 90% of what we eat is homemade. It’s a whole lot easier to justify eating “junk food” when you’re making it from scratch. I know that I’m using choice ingredients and because I put the work in, I’m much more judicious about my portion. Nothing is off limits and I’m lucky that I don’t suffer from any food allergies.
I’m always interested in trying new foods and welcome the challenge of cooking with new to me ingredients. Our dear baby-sitter and friend is gluten-free and I wanted to make something edible to celebrate her birthday last month. Other than dabbling a little in gluten free baking, I don’t have much experience. I get a little overwhelmed at all the flour choices! I’ve had a package of Cup 4 Cup gluten free blend in my pantry for awhile now so I pulled it out and took a chance making my favorite brownie recipe using the already made flour blend.
Da bomb.
For reals. These were so good, I’ve made them twice now. You would never know these are gluten free. They just taste like a really good fudgy brownie.
For good measure, I stirred in a dark chocolate bar that I’d roughly chopped and then topped them with a sprinkle of coarse sea salt before baking. The babysitter loved them and now I get to enjoy them every afternoon with my cup of tea. I think that’s what you call a win win.
{Gluten Free} Salted Fudgy Brownies
- Yield: 16 brownies 1x
Description
Rich, chocolatey gluten free brownies with dark chocolate chunks and a touch of sea salt for good measure.
Ingredients
- 12 tablespoons butter
- 1 1/4 cups granulated sugar
- 2/3 cup cocoa powder
- 1 1/2 teaspoons pure vanilla extract
- 3 large eggs, room temperature
- 1 cup gluten free flour blend (I recommend Cup for Cup)
- 3 oz good quality dark chocolate bar coarsely chopped
- 1 teaspoon coarse sea salt (such as Maldon) for sprinkling
Instructions
- Preheat oven to 350F degrees. Line a 9×9 square baking pan with parchment paper and set aside.
- In a medium sized saucepan, melt the butter over medium heat. Remove from stove when melted and stir in granulated sugar and cocoa powder.
- Stir in the vanilla extract and eggs until the eggs are fully incorporated. Stir in the flour until well combined and then stir in chocolate chips.
- Pour brownie batter into the parchment lined baking pan. Sprinkle evenly with sea salt.
- Bake brownies in the preheated oven for 30-35 minutes or until done. (The brownies will fell firm to the touch and a toothpick inserted into the middle of the brownies will come out clean)
- Cool brownies on a cooling rack for at least 30 minutes (best if you can wait longer) before cutting and serving.
Notes
This recipe has been modified for high altitude. If you don’t need to modify, then decrease the vanilla extract by 1/2 teaspoon and increase the sugar by 3 tablespoons.

Oh sweet Mama do those look amazing. And since they’re gluten free I can eat 3 of them and not have to worry ; )
Great! I just found out that my best friend’s grandson has to go gluten free, and he loves sweets, especially chocolate. I baked some hazelnut chocolate chip cookies for him this morning (with Bob’s Red Mill Hazelnut flour and natural almond butter).
I’m going to share this recipe with his mom. Thank you. 🙂
