Pomegranate Yogurt Bowls
My go to breakfast the past few weeks, these Pomegranate Yogurt Bowls, are made with my favorite whole fat yogurt, pomegranate seeds, sliced banana, homemade granola, a scoop of natural peanut butter and sprinkled with unsweetened coconut and hemp seeds.
My dad is funny. He’s witty and has a wicked sense of humor, yes, but that’s not what I’m referring to today. He’s also of the quirky and dare I say weird kind of funny? Oh man he’d kill me if he was reading this. But it’s true. Here’s the deal. He’s funny about his food. And even though he’s a self proclaimed meat and potatoes kind of guy, he’s pretty picky about what he’ll eat. He likes his food non fussy and isn’t big on eating new things or in his words any foods that are “different”.
I get that he likes what he likes but other than my 5 year old, I don’t know anyone who is more unwilling to try new foods. I literally laugh out loud thinking what he would do if I served this yogurt bowl to him. These Pomegranate Yogurt Bowls would freak him to his core. He’d wrinkle his nose and make some snide comment about them being hippie food. He’s more of a yoplait yogurt and banana on the side kind of guy. Homemade granola, pomegranate seeds, hemp seeds? Not a chance. And no, Dad, they won’t get you high. Guess I won’t be serving this to big Papa Mike anytime soon. I think we’ll stick to coffee and apple turnovers when he comes over. Or go out for cinnamon rolls.
But it’s all good. He knows what likes and that’s that. And just because my dear old dad wouldn’t come near these Pomegranate Yogurt Bowls, I’m all over them. In fact, I’ve had some variation of this almost every day the last few weeks. Not only do they taste amazing, they’re filling, healthy, seasonal and can I get a high five for how pretty they are? Nutrient power house right here. Hardly a real recipe and more of a put-all-the-things-in-the-bowl and go kind of recipe but still too good to not share on the blog. And triple bonus points because they’re so simple to make! (In full disclosure, I buy my pomegranates already seeded. Yep, they come in a tidy 4-pack from Costco. Just saying.)
It’s kind of hard to get psyched about winter produce as it doesn’t feel like there is much to choose from this time of year. I’m thankful to Becky from the Vintage Mixer for hosting these monthly Eat Seasonal round ups every four weeks as I not only find inspiration but a recommitment to eating seasonally and seeking out local produce. While I’m sure my Dad would question many of the recipes in this month’s round up, I welcome them all with open arms. See below for December’s round up and recipe links. There are some beauties!!
As always, thanks for reading and have an awesome week! xo, Kelley

These yogurt bowls look like one delicious way to wake up — pomegranate makes everything extra special for me. I’ve seen those Hemp Hearts at Costco — I need to try those!
I’ve not yet seen them at Costco, I’ll keep my eyes open for them!
I LOVE LOVE LOVE hemp hearts. They make regular appearances in my smoothies and oatmeal.
I’ll take all the hippie food if it looks this good! What a gorgeous way to start the days.
I’ve been adding hemp seeds to my smoothies–simple way to add in protein. Found mine in the WF bulk bins. I am sure they are one and the same as Hemp Hearts. Whole milk yogurt–the only way to go in my fridge.
I absolutely love breakfast like these. And I tried to serve plain greek yogurt to my dad once and he was didn’t think it was real yogurt. HA!
Ha ha! My dad is the same way. If it’s not Yoplait, it’s not yogurt! 🙂
