With two young, super active boys and a husband that works a ton, I don’t get much one on one time with either of my kiddos. They’re on the same school schedule now and since neither of them are doing any extra curricular activities, we have a lot of together time. While it’s fine for the most part, getting one-on-one is hard to come by and something we all miss when it’s not happening. So I’m really making an effort to schedule time with each of them individually. I know how much it means to both boys when I can give them undivided attention and I have to say, I find myself craving it too. When we’re all together, things get chaotic. But when it’s just two of us, conversations are undisturbed and neither of them are fighting for my attention. In short, they feel special and I don’t feel like the crazed mom that I am most of the time.

Sometimes it’s a planned outing like skiing or the zoo and sometimes it’s hanging out at home on the couch eating popcorn and watching a movie. My older son went on a special getaway with his Grandpa this weekend so my little one and I found ourselves with a few days together just the two of us. Friday afternoon was pretty much the best ever. We spent a good hour talking about what we should do with our time together and oh the possibilities! We talked about going on a Safari in Africa, building an igloo and sleeping in it, eating donuts for breakfast, lunch and dinner and my favorite- getting 5 king cobras as our new pets. I just love the imagination of kids! And unfortunately for my 5 year old, none of these made the list. Especially the king cobras.

After going back and forth we decided our night should include Tortilla Pizza’s for dinner, a trip in town to see Santa Claus and then hot chocolate and a movie before bed. A bit ambitious considering we usually go to bed by eight o’clock. And funny enough the only things we were able to cross of our list were Tortilla Pizza’s for dinner and a visit with St. Nick. My sweet stinker fell asleep on the way home. Our big night ended quite early. So after transferring him to bed, I laid on the couch, in my comfiest sweats, to watch the Hallmark channel and drink prosecco. Can you say glorious?

And now, the morning after, as I drink coffee and sit in front of the fire, I have my favorite littlest human snuggled up next to me while I get a little work done and he watches Curious George. While I can’t make an African Safari happen or condone donuts for breakfast, lunch and dinner, I can snuggle the crap out him and let him daydream about igloos and cobra snakes. I consider this a total win and I’m pretty sure he’d say the same.

So tortilla pizzas. Have you tried them? If not, you’re missing out. 1) they’re ridiculously easy. 2) everyone gets to make it their own. 3) if you’re into thin crispy crusts, these are for you. 4) I always have the ingredients on hand to make some variation of the Tortilla Pizza happen. And 5) they just taste good. I don’t lie when I say these are super easy. The hardest part is waiting for the oven to pre-heat to 425F degrees. The rest is easy breezy. You could literally top these with whatever you want. I love the combo of bbq sauce, chicken, onion and cilantro. It’s spicy, sweet, savory and fresh all the same time! My little guy prefers plain jane and goes the traditional route with marinara and mozzarella. Either way, just be sure to cook the pizza’s in a cast iron skillet. It’s the only to guarantee a crispy bottom. If you bake them on a baking sheet, the bottoms will get soggy.

BBQ Chicken Tortilla Pizza

Ingredients


Instructions

  1. Preheat oven to 425F degrees.
  2. Place tortilla in a cast iron skillet.
  3. Spread bbq sauce on tortilla. Scatter with shredded chicken and sliced onion. Top with shredded cheddar and mozzarella. Bake in a preheated oven for 15 minutes. Pizza is done when edges are golden and cheese is bubbly. Remove from oven and top with fresh cilantro.
  4. *For a basic pizza, replace bbq sauce with your favorite marinara. Top with shredded mozzarella and cook the same.
