Chocolate Peanut Butter Cup Ice Cream
My husband and I have been married for almost ten years and he’s never been much of a gift giver. And by that I mean he gives really lame gifts. His heart is as big as they come but he puts zero thought into gift giving and usually ends up picking up something last minute. Like rushing through an airport in Cabo, Mexico and picking me up a styrofoam baseball cap with sequin dolphins. (No joke)
One of the first Christmas’s we were married, he gave me a mini garbage can (for his bathroom), a shaved ice maker, (I don’t like really cold things), a poached egg thingy for the microwave (something he’d been talking about for weeks that he’d seen on an infomercial) and a really nice matching sweatsuit. In XXL. (I’m a medium)
This kept up for many years. A few years back, I finally decided to tell him the truth. He was wasting his (our) money on gifts that not only I wasn’t going to use but I don’t think he actually cared about giving. Instead of him being hurt, which I thought he might would be, he was relieved. Apparently buying gifts “isn’t really his thing.”
So for the last 5 or 6 years, I’ve gotten either a gift certificate to the day spa or I’ll send him a link to my Amazon wish list. Which is how I ended up with a brand spankin new ice cream maker for Mother’s Day. And, now, how you get to be the recipient of this deliciously decadent chocolate ice cream with Reeses Peanut Butter Cups. It’s like the gift that keeps on giving.
Homemade ice cream is a cinch to put together and this one is everything the name promises. Not overly sweet chocolate ice cream studded with one of my favorite candies, mini Reeses Peanut Butter Cups. If it’s too choclately for you, decrease the cocoa powder to 1/2 cup. I like the slightly bitter bite that the extra cocoa offers. For me, it cuts the richness of the rest of the ingredients.
Perfect for a hot summer day, this one is for the kids and adults!

Chocolate Peanut Butter Cup Ice Cream
Ingredients:
- 3/4 cup cocoa powder
- 1 cup brown sugar
- pinch kosher salt
- 2 cups whole milk
- 2 1/2 cups heavy cream
- 1 tablespoon pure vanilla extract
- 1 package mini peanut butter cups, cut in half
Directions:
In a medium bowl, combine cocoa powder, brown sugar and milk. Using a whisk, slowly add whole milk and stir fairly aggressively until the sugar is dissolved and the cocoa is mixed in. Stir in the heavy cream and vanilla extract. Using a chinois or a sieve, strain the ice cream mixture into another bowl. Freeze ice cream according to your ice cream makers instructions. When ice cream is frozen and just about to desired consistency, stir in halved peanut butter cups. Serve immediately if you like soft serve or place ice cream in a freeze proof container and freeze for at least 4 hours until firm.

Great recipe, on a hot day like today it would taste good. I’m assuming you got a Cuisinart ice cream machine. Which one did you get? Do you like it? I’m in the market for one and I’m looking for feedback from people who have various models.

I happen to be in love with Reese’s lately, you’ll notice it’s been appearing on the blog a lot and is about to again. This looks and sounds absolutely delicious. As far as the gifs go… well, I haven’t decided yet, but no matter how hard I try my husband always picks out the perfect, most amazing gifts, so I’m beginning to stress.

My husband absolutely HATES the whole “I have to buy a gift because it’s a holiday or birthday” thing. He usually buys things that I could care a less about. It’s when he buys things on a whim that they mean something and are special and worthwhile 🙂 I need to link him to my Amazon wish list for sure though!!
