Crispy Kale and Brussels Sprout Tacos with Bacon and Whipped Feta
Guess whaaatttt? It’s a baby shower for the lovely and glittery Jessica from How Sweet it Is. And guess whaaaatttt else? I brought back Taco Tuesday for the special day. Can you get on board with Crispy Kale and Brussels Sprout Tacos with Bacon and Whipped Feta? I sure hope you said yes ’cause that’s what we’re serving up! Oh yeah, I’m also sharing some unsolicited baby advice with Jessica so pull up a chair and listen in.
1. People offer baby advice not because they’re trying to be annoying (I promise) but rather it’s our attempt to help you transition into “the club” and offer up anything and everything that worked in our experiences. Take everything with a grain of salt. Including this.
2. I don’t care what the doctors say. Waking a baby every 3 hours to feed is a rubbish. If the baby wants to sleep at night, LET IT SLEEP. And you try do the same.
3. Wipe warmers? Save your money.
4. Instead, spend that extra money on onsies. You’ll be amazed at how many times a baby can soil through their diaper and clothes. Ah-mazed.
5. And I wish I could tell you how to keep socks on littles ones. I lost so many. SO many. If you figure it out, let me know.
6. Throw up and poop will become a part of your daily routine and somehow it won’t even phase you. I’m still trying to figure this one out.
7. Yoga pants will be your best friend. Like you very best bff and way more than before you had a kid. And it’s totally ok if you wear the same ones for days in a row. And they’re they’re totally dirty. We all did do it.
8. Invest in a good bra. Girl, you gonna need it.
9. It’s totally normal to think your husband is a weird alien from some other planet right after the baby is born. Don’t worry that goes away. Mostly.
10. Don’t be afraid to ask for help. Seriously. It’s tough and you can’t do it alone.
11. Being a mom is the toughest and bestest thing you’ll ever do. The only right way to do something is what feels right to you and your family. Listen to your mama intuition- it won’t steer you wrong.
12. When people offer you advice, just smile and tune them out. Unless it’s regarding a good post-baby bra. Then I swear to you- listen up!
13. But mostly, try and enjoy it because it goes by quick.
14. And you can never love on a baby too much. I recommend getting down in their neck, right behind the ears. That’s where the gold is.
15. Take a deep breath. And another. And another if need be. You’re about to go on the ride of your life.
16. Totally not related to babies but these tacos are the bomb. Whipped feta should go on everything.

PrintCrispy Kale and Brussels Sprout Tacos with Bacon and Whipped Feta
- Yield: 8 tacos 1x
Ingredients
- 4 slices bacon
- 1/2 head kale (about 10 leaves), stems removed and coarsely chopped
- 2 cups coarsely shredded brussels sprouts
- 1 clove garlic
- 1/4 cup white wine
- 4 oz sour cream
- 4 oz feta cheese
- lemon juice
- 8 corn tortillas
- coconut oil
- parsley for garnish (optional)
Instructions
- Make feta spread by combing sour cream, feta cheese and a squeeze of lemon juice in a food processor. Pulse until smooth and combined; set aside.
- In a large skillet, fry bacon to desired crispiness. Remove from pan, drain and crumble; set aside.
- In the same pan, cook kale and brussels sprouts over medium-high heat, stirring often to prevent burning. Cook about 10 minutes until veggies are soft. Add garlic and cook 1-2 minutes more. Add white wine and cook until wine is evaporated.
- Meanwhile, heat about 1/4 cup of coconut oil in a small sauté pan. Heat until hot and bubbly. Fry corn tortillas about 30 seconds each side. Let drain on a paper towel.
- To assemble tacos, spread each tortilla with a smear of whipped feta. Scoop a healthy dose of veggies on the tortilla. Top with crumbled bacon. Enjoy!

I don’t really have a recommendation. I guess you could leave it out…
Clarification question – when you say “drain” does that mean to drain the pan of the bacon grease? If so, do you add anything (oil?) to the pan before cooking the Brussels and kale?
I drain off only a some of the bacon grease. I leave a few tablespoons in to sauté the brussels and kale.
