Grilled Summer Squash with Feta, Lemon and Fresh Herbs
I’m declaring this Grilled Summer Squash with Feta, Lemon and Fresh Herbs the official side dish of summer. It’s fresh, bright and downright addictive. And did I mention it’s a cinch to prepare?
‘Tis the season of perusing the farmers market, with no real shopping list in hand, and letting the local produce dictate and inspire my family’s weekly menu. Every Wednesday I visit the Park City Farmers Market and come home with a basket full of produce and a bazillion ideas running between my ears. Which is nothing new as my mind always seems to be running but that, my friends, is for another day 🙂
We can all agree that it’s too damn hot to turn on the oven right now so if it can’t be made in my slow cooker or on the grill, it just ain’t happening. (Unless it’s cookies. I’ll always suffer in the name of cookies) The grill has been my trusty sidekick for dinner just about every single night these past few weeks. We’ve done burgers, chicken, sausages and a few nights it’s been a ton of grilled veggies to serve over greens. And wine. Always wine.
That’s where this dish all started. Grilled summer squash = the bomb if you don’t already know that. (ps- these grilled squash tacos are my fave) Grilled zucchini is pretty awesome on it’s own but when you finish it with salty feta, toasty pine nuts, lemon zest and fresh herbs? It’s ridic. I wasn’t kidding when I said this is officially the dish of summer for me. It’s just as tasty at room temperature as it is right off the grill. It goes with anything and everything and it’s the perfect make ahead for a potluck as well as a last minute side dish when you need dinner on the table stat. Winning, you guys, winning.

PrintGrilled Summer Squash with Feta, Lemon & Fresh Herbs
Ingredients
- 3–4 summer squash- any variety will work
- 1–2 tablespoons olive oil
- salt, pepper and garlic powder
- lemon zest
- feta cheese
- pine nuts
- fresh herbs- dill and chives are my favorite
Instructions
- Wash, trim and quarter squash length wise.
- Put summer squash in a large ziplock bag and drizzle with olive oil. Season squash liberally with salt, pepper and garlic powder. Let sit for 15-30 minutes while you prepare a hot grill.
- Grill squash over medium-high heat, turning frequently, until squash is just tender and has those gorgeous grill marks.
- Remove from grill and, to taste, top squash with the lemon zest, crumbled feta, toasted pine nuts and whatever fresh herbs you have on hand- chives and dill are my favorite.

Ha ha. Yeah cookies and fresh blueberry muffins are the only things worthy turning my oven on for during the month of July. It’s too dang hot! I’m down with calling this the side dish of Summer. Looks amazing!
