For not being a huge football fan, I totally dig football season. Football comes with it’s own culture and for my family it means gathering around the tv on a lazy Sunday afternoon to watch the game(s), fill each other in on our busy lives and eat good food. Plus the beginning of football season means snowboarding season is just around the corner and that makes this girl genuinely giddy!
Football is taking a new spin this year as I have a 7-year old who just started playing in his first flag football league and to say he’s loving it would be an understatement. He wears his team jersey everyday (go Ravens!) and has started actually watching the game and asking questions about the rules and different plays. I suppose with two young boys and a football obsessed husband, it was only a matter of time that the littles joined his love of watching games all weekend. Good thing I’m pretty pumped to don my Giants t-shirt, lay on the couch and half watch the game behind my magazine or book.
Plus, I have a very important role in football sunday: I’m the snack provider. I take game day eats pretty seriously and consider myself a valuable asset to what makes Sundays so special. I mean what good is gathering with friends if their isn’t good food involved?
Yesterday my entire family came over to watch football and it was the first time we’d entertained in our new house. I wanted to keep the food simple (remember- I have to lay on the couch doing as little as possible) but also pump up the wow factor a little since it was the first full football Sunday and I’m know for putting out a solid spread when people come over. We spent the afternoon alternating the couch and hanging in the backyard and in the evening we started a fire and kids made s’mores. It was a gorgeous evening!

I wanted to create a recipe that would not only be a hit from the comfort of the couch but would also travel well if you’re going to a friends house or doing proper tailgating in the parking lot. And by proper tailgating I mean eating and drinking too much before the game and heckling anyone who isn’t wearing your team colors. Awe, you gotta love football! I’m my ideal world, chips and salsa would be served at every meal. Shoot, it would be my meal if I had my way. The idea of adding shrimp to salsa didn’t get immediate high 5’s from my husband who I ran the idea past. But I was so sure it was going to be awesome that I went ahead and did it anyway and I’m glad I did. It’s awesome sauce. The diced up shrimp adds a nice heartiness and texture to the salsa and it’s totally winning with the sweet pineapple and smokey cumin. Add your favorite tortilla chips and you’ve got a winning tailgate recipe!

- Yield: about 2 cups 1x
- 8 oz cooked shrimp, diced into bite size pieces
- 1 cup diced fresh pineapple
- 1/4 cup diced red bell pepper
- 1 finely diced hot chili pepper (optional)
- 1/4 cup fresh cilantro
- 3 tablespoons lime juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon ground cumin
- tortilla chips for serving
- In a small bowl, combine chopped shrimp, diced pineapple, minced bell pepper and chili pepper if using, fresh cilantro, lime juice, kosher salt and cumin.
- Toss to combine, cover with plastic wrap and let marinate in fridge for 1 hour before serving.
- Serve with tortilla chips for dipping.
