Spicy Cilantro Coleslaw

Shredded cabbage, carrots, onions, cilantro and creole seasoning make up the bulk of this Spicy Cilantro Coleslaw. Slightly creamy and just a touch sweet, I could devour this coleslaw on it’s own though it’s awesome on sandwiches, tacos or a side dish to slow cooker pork!

This is what I must tell myself anytime I log on to Facebook these days. I primarily blame it on election season but can not discount the number of banana heads I’m apparently friends with. Why is it that one person can share an article or opinion- one that I don’t necessarily share, btw- and be fine with it but someone else shares the same thing and sets me into full blow Facebook rage. And being the outspoken and often controversial person that I am, it takes everything- and I mean EVERYTHING- to not get pulled in and partake. Inevitably myself or someone else leaves a comment and BAM a stupid ass argument ensues and it makes me rage. And want to quit Facebook forever. And question some of my friend choices. Sheesh.

But alas, I won’t quit Facebook. I will hang in there until election season is over and do my best to quickly skim over my asinine friends posts and strangers comments. As far as the friends that are just simply banana heads? One word: delete.

Spicy Cilantro Coleslaw


Ingredients

  • 1 (16 ounce) bag coleslaw mix
  • 1/8 cup finely chopped red onion
  • 1/2 cup mayonnaise
  • 2 tablespoons sugar
  • 3 tablespoons milk
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon creole seasoning
  • 1/3 cup chopped fresh cilantro

Instructions

  1. Combine all ingredients except cole slaw mix and onion in a large bowl and combine well.
  2. Add the cole slaw mix and toss to coat.
  3. Cover and refrigerate several hours or overnight to allow flavors to blend.
