Banana Trail Mix Muffins
A healthier banana muffin recipe made with coconut oil, sweetened with honey and studded with Sahale Snacks NEW Berry Macaroon Almond Mix. Banana Trail Mix Muffins make a great breakfast served with yogurt and fresh fruit or an easy afternoon snack after swimming all day at the pool!
I think it’s fair to say that packing up a house that you’ve lived in for 11+ years is exhausting. In fact, I’m going to declare that it’s more emotionally draining than it is physically. I’m not afraid of the manual labor (just means I get to have an extra cookie and glass of wine at the end of the day) but I’m finding myself dreading saying goodbye to our current home. It’s weird because if you ask me about the move, I’ll tell you how psyched I am to be downsizing and genuinely looking forward to a new adventure. So why do I lay in bed at night and wonder how I’m going to pack up and leave behind the only home my boys have ever known? How do I make sure the last two weeks in our house are joyful and not overshadowed by the stress and physical work of moving. How do I take my almost 12 year old dog who has never known a different home and LOVES our backyard to a new place?
My sweet husband assures me that everything is going to work out. Deep down I know he’s right. Kids are resilient and mine are already planning a new fort in the next backyard. I’m sure within in a week they’ll be right at home in the new place. My beloved fur baby will adjust because that’s what dogs do. And me? Well, I’ll come around in my own time. It’s a fine line I walk right now, trying to pack a little each day so it’s not so overwhelming at the end and also trying to relax and enjoy the last few weeks in our home.
It’s funny, I have SO much packing to do yet I find myself in front of my stove testing new recipes and I’ve been baking up a storm this past week despite the hot weather. My kitchen is without a doubt my happy place and I suppose I’m soaking up the last few weeks in the kitchen that has served up many a meals and hundreds of blog posts. I want to spend every minute I can in my favorite spot while it’s still mine. If you’ve been to my current house, you know it’s a pretty awesome space. I’ve joked over the years that my kitchen is the epicenter and I’m the CEO of the mothership.
Amidst all the packing (and cooking) we’ve still been doing our thing and getting outside as much as we can. Spending long afternoons at the pool (avoiding the mess at home) or going for a quick bike ride or hike with the dog when we need a break from packing. I think staying active and soaking up the sunshine is the only thing keeping us all sane. Partly because I’m a control freak and partly because I’m obsessed with eating food that is good for me, I pack snacks just about everywhere we go. I don’t like to get caught empty handed which means you can always find a bag of trail mix or the like in my car, purse, tennis bag and fanny pack. (Oh yes, I have a fanny pack.)
When Sahale reached out to me a few months ago and asked if I’d review their new Nut and Fruit Mixes, I told them I’d happily do a review since I was already such a huge fan of their products (Have you had their Valdosta Pecans or Soledad Almonds? Unreal.) but I also wanted to create a recipe as well. I loved the idea of creating a healthy recipe using their trail mix. Little did I know I’d be packing up my kitchen and the blog would take the back burner this month. But alls well that ends well because like I said above, I’ve been avoiding packing by way of baking.
Staying true to Sahale’s motto #snackbetter, I wanted to make something unfussy that embodied the spirt of health and good food. Because we’re in chaos right now, I also wanted something simple that could double as breakfast and snack. These muffins fit the bill perfectly. They are just as at home with a dollop of Greek yogurt and fresh fruit for a light breakfast as they are for an afternoon snack at the pool or pulled from my fanny pack mid hike. The Berry Macaroon Almond Mix is the perfect mix in for these simple and wholesome muffins: toasted coconut, almonds and cashews and my favorite- lemon infused apples and dried blueberries. The snack mix is incredible on it’s own and would be an awesome addition to a bowl of oatmeal!

Description
A healthier banana muffin made with spelt flour, honey, coconut oil and Sahale Trail Mix.
Ingredients
- 3/4 cup whole wheat pastry flour
- 1/2 cup spelt flour
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon salt
- zest of 1 lemon
- 1/2 cup coconut oil, melted
- 1 cup mashed banana
- 1/4 cup honey
- 1 egg
- 2 tablespoons Greek yogurt
- 1 teaspoon vanilla extract
- 1 1/4 cup Sahale Berry Macaroon Almond Mix, divided
Instructions
- Preheat oven to 350F degrees.
- Grease or line a standard 12-cup muffin tin with liners. (I greased mine with butter!)
- In a small bowl, combine whole wheat pastry flour, spelt flour, baking powder, and salt; set aside.
- In a large bowl combine lemon zest, melted coconut oil, mashed banana and honey. Mix until fully combined and then add egg, Greek yogurt, and vanilla extract. Stir in dry ingredients and mix just until incorporated. Fold in 1 cup of the trail mix.
- Divide the batter evenly into the greased pan. Using the extra quarter cup of trail mix, sprinkle it on top of the muffins.
- Bake in a preheated oven for 20 minutes or until muffins are cooked all the way through. Remove muffins from oven and let cool completely on baking rack.
Notes
These muffins freeze beautifully or they’ll last in an airtight container on the counter for 2-3 days.
This recipe was tested in my high altitude kitchen. To make at high altitude, increase baking powder to 1 1/2 teaspoons and decrease vanilla extract to 1/2 teaspoon.

I made a batch of these last night. I’m always looking for baking recipes that don’t have sugar and use honey or agave instead. They were really moist and very flavorful!! Thanks for the recipe.

I was going to make a batch of these but don’t currently have spelt flour. I do have rye, buckwheat, almond or coconut flours. Would any of those be a good substitute or would you just sub all regular flour? Thanks!
