Chocolate Covered Strawberry Overnight Oats
If we can have breakfast for dinner then why not dessert for breakfast? Because that’s what these overnight taste like: dessert. Rich, chocolatey overnight oats with fresh strawberries and cacao nibs are filling, healthy and a great way to start any morning.
What is it about eat breakfast for dinner that is so enticing? I think it’s because it feels like cheating. And who doesn’t love to feel like they just got away with something? I know I do. When I was a kid it was always such a treat to have waffles or pancakes and bacon for dinner. It was one of my favorite dinners when I was little and things haven’t changed much now that I’m an adult. Kudos that my kids feel the same way. Not only is it a pretty easy meal to get on the table, it’s one of few things I make that the entire family is going to be psyched to sit down to. Which is no easy feat I tell you.
I suppose the same mentality can be said for having dessert for breakfast. Which if you haven’t heard of is totally a thing. At least it is in my house. Again, it’s that whole cheating mentality and what can I say? I like to bend the rules. I’m infamous for saving my dessert. Not to sound like an old lady but I don’t really like eating desert late at night. I’m usually too full after dinner anyway so I’m much more likely to save my dessert and enjoy it the next morning with a cup of coffee. So if I come to your house for dinner and decline dessert but ask for a doggy bag, now you’ll know why.
I get the “dessert for breakfast” gene thing from my late grandma. She was notorious for having cookies or just a little something sweet every morning after her breakfast. She always had a smirk when she reached into the cookie jar and I remember wanting to be part of the naughtiness that was dessert in the morning. I mean, what kid wouldn’t? I can’t help but smile as I remember this because her coffee was also over-the-top sweet and she always had a ridiculous amount of jam on her morning toast too. It’s safe to say she had a sweet tooth. And it’s even safer to say that the apple doesn’t far fall from the tree!
But as I get older and am more in tune with my body, I realize I can’t handle all that sugar. (read: it makes me feel like doo-doo.) So as much as I’d love to advocate cookies for breakfast, it’s not going to happen. But these oats, though they could easily pass for dessert, aren’t actually dessert at all. The oats are mixed with cacao powder, almond milk, greek yogurt and just a touch of maple syrup the night before. In the morning, after a good stir, the oats are topped with fresh strawberries and cacao nibs (optional but totally necessary) for a quick, healthy, dessert-like breakfast. Bonus points that I can eat this in the car if we’re having a late morning and even better if I can enjoy it with a hot cup of coffee before the kiddos get up.
I’m pretty sure my grandma would approve of this for breakfast. But don’t think that doesn’t mean she wouldn’t have her hand in the cookie jar after. Because she would have. She practically invented the dessert for breakfast movement.

- Yield: 1 serving 1x
Ingredients
- 1/3 cup gluten free rolled oats
- 2 teaspoons cacao powder (or cocoa powder)
- 1/3 cup almond milk
- 3–4 tablespoons plain greek yogurt
- 1 tablespoon maple syrup
- 3–4 large strawberries, sliced
- 1 teaspoon cacao nibs
Instructions
- In a glass jar, combine oats, cacao powder, almond milk, yogurt and maple syrup. Stir, cover and let sit over night in fridge.
- In the morning, give a good stir and top with sliced strawberries and cacao nibs.
Notes
This recipe easily doubles or triples!
