Summer can not come fast enough. Seriously. With only 7 days left, it’s taking everything we have to stay focused and power through. I’m sure who is more excited, me or the kids. With it staying light so late, it’s hard to get the kids to go to bed at a decent hour. We’re all craving lazy mornings and would much rather spend our days at the pool than in a classroom or cleaning the house. And if the end of school weren’t enough, we’re also signed up for blast ball (little kids t-ball), baseball and karate. It’s literally something every night of the week. Signing up for multiple extra curricular activities seemed like a way better idea back in March when there was still 6-inches of snow on the ground. Le sigh… when will I ever learn?

I’ve been so busy with work and my budding tennis career *ahem* that I haven’t been very diligent about meal planning. I’m embarrassed to admit how often we come home in the evening and I have absolutely nothing planned for dinner. My 7-year old asked me last night how is it that I cook all the time and yet we had nothing in the fridge for dinner? Good question, little man, good question. And by the way, when did you get so observant? Sheesh.

Whenever I’m faced with needing a meal stat, breakfast for dinner is my go to. Mainly because eggs are quick, kings of protein and everyone in my house will eat them sans complaining. Scrambled eggs can get a little boring so lately I’ve been doing my best to jazz things up. Baked eggs seem so fancy and a bit of a to do but really they could’t be more simple. The key to baked eggs for dinner on a busy night is a toaster oven. Do you hear the angels singing? For reals. No preheating and dinner can be on the table in minutes. What harried mama and hungry kid can’t appreciate that?

Considering my toaster oven was like 17 years old and I bought it a garage sale in college, I couldn’t really say no. Pretty glad I didn’t because this toaster is getting a lot of play. Like a lot. It’s sleek and a toaster oven power house. (Is that even a thing?) With it’s super nifty dual infrared heating system (jargon for ultra fast and even cooking) means frozen bagels toast in minutes, I can roast veggies to perfect tender crisp in mere minutes and baking eggs is a breeze. Just like that, I go from being the mom who plays too much tennis and has nothing for dinner to the mom who shuttles kids around, finds time to hit the ball and gets a hot dinner on the table. BAM.

Baked Eggs with Marinara and Parmesan


  • Yield: 4 servings 1x

Description

Baked eggs with marinara and parmesan cheese.


Ingredients

  • 8 eggs
  • 1 cup marinara sauce, divided
  • 1 tablespoon capers, drained (optional), divided
  • 1/4 cup whipping cream, divided
  • 1/4 cup parmesan cheese, divided
  • salt and pepper
  • chives for garnish

Instructions

  1. Butter 4 ramekins.
  2. Pour 1/4 cup marinara in the base of each ramekin and top with capers if using.
  3. Crack two eggs into each ramekin.
  4. Top eggs with 1 tablespoon cream and 1 tablespoon parmesan cheese.
  5. Sprinkle with salt and pepper.
  6. Bake in toaster oven, set at 400F degrees, for 10-15 minutes until white of eggs are cooked and yolk is desired doneness.
  7. Garnish with chopped chives and serve with buttered toast.
