Chopped Salad with Cumin-Lime Vinaigrette

An all veggie chopped salad with feta cheese, chopped cilantro and a cumin-lime vinaigrette. It’s great served with grilled chicken or fish, as a dip with tortilla chips and makes a great light, vegetarian lunch!

It’s been awhile since I got sucked into a really great tv series. My husband and I have a history of watching an entire season in a matter of weeks. A few years ago we blew threw Mad Men and Friday Night Lights in mere months. We’d drop the kids at daycare and school and then come back home and climb under the covers or curl up on the couch and turn our phones off. The kids would eat cereal for dinner and they’d have to turn their dirty clothes inside out because I was boycotting laundry in favor of Coach Tayor and Don Draper.

Last fall when my husband I were on vacation celebrating our 10 year anniversary, we holed up in our hotel room and watched season one of Scandal. It was a rainy day and we did get up to go for a walk and eat meals so it’s not like we were total slugs. Since then, we haven’t watched anything together. Partly because we’ve been busy but mostly because we haven’t been in the same place at the same time long enough to start anything.

A couple of times over the last few months I’ve asked you here and on Facebook what our next tv series should be. You’d all given me so many great suggestions and unfortunately on my end, I’ve just had so little time. Things are finally starting to ease up and I’m more than ready to kick up my feet and waste some time in front of the tube.

The Mr was out of town last week and I had a few nights where I had a to do list a mile long but decided to ignore it. I’m really responsible that way. I found myself on Netflix and before I could stop myself, I started watching Orange is the New Black. It’s official: I’m totally digging it. Just enough humor to offset the somewhat heavy nature and the character development is spot on. If you need a new show and don’t mind a little girl on girl and nasty prison guards, this is for you. Season two goes live June 6th. If I stop blogging, don’t worry. It’s only because I’ve got the curtains drawn and we have no food in the house. Things will resume to normalcy sometime soon.

Chopped Salad with Cumin-Lime Vinaigrette


  • Prep Time: 25 minutes
  • Total Time: 25 minutes
  • Yield: 6-8 servings 1x

Ingredients

  • 1 1/2 cups diced cucumber
  • 1 1/2 cups diced bell pepper
  • 1 1/2 cups halved cherry tomatoes
  • 3/4 cup diced radishes
  • 3/4 cup diced green onion
  • 1/2 cup crumbled feta cheese
  • 1/2 cup minced fresh cilantro
  • 1/4 cup lime juice
  • 1/4 cup extra virgin olive oil
  • 2 cloves minced garlic
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon cumin
  • 1 tablespoon honey

Instructions

  1. To make the dressing, mix lime juice, olive oil, minced garlic, kosher salt, cumin and honey in a small mason jar with a tight fitting lid. Screw lid on tightly and shake vigorously until well combined. Set aside while you make salad.
  2. Combine all the veggies in a bowl. Toss with dressing and stir in cilantro and feta cheese. Serve at room temperature.
