Slow Cooker Ground Beef Tacos

I REALLY LOVE MY SLOW COOKER
I use my slow cooker year round, do you? I feel like most people use their slow cookers the most during the winter months but I use mine all year long. It love that it doesn’t overheat the kitchen during the warmer months and you just can’t beat the ease, am I right? It is hands down the most used countertop appliance in my kitchen. I store it in my pantry but you’ll often find it on my kitchen counter because I use it multiple times a week and don’t get it put away before I look to use it again!
TACOS FOR THE WIN
I have a ridiculous amount of taco recipes on my blog. If you’re a long time reader than you’ll remember when I used to do Taco Tuesday and I shared a new taco recipe each week. It’s been a long while since I did that but I still love making tacos! In fact, we make them at least once a week. It’s one of the few dinners I can make that everyone is happy!
MAKING TACOS IN THE SLOW COOKER
You could easily make ground beef tacos on the stove top but the slow cooker makes the dinner time routine much easier and using the slow cooker makes this a great make ahead dinner option. I brown the ground beef with some diced onion and then through it all into the slow cooker with a savory taco-like sauce. Slow cooking the ground beef makes for the most flavorful and super tender taco meat.
CAN YOU USE TURKEY OR CHICKEN?
You could easily swap the ground beef for either ground turkey or chicken. Because both of those are a lot leaner than ground beef, I’d suggest adding a little bit of stock or water and take care not to overcook the meat so it doesn’t get too dry. I prefer ground beef tacos because that’s what I grew up on but understand that it’s nice to have a leaner and healthier option, too!

Slow Cooker Ground Beef Tacos
Description
A super easy recipe for slow cooker tacos using ground beef, tomato sauce, and pantry spices.
Ingredients
- 2 lb ground beef
- 1/2 cup minced, yellow or white onion (about 1 small)
- 1– 4 oz can mild green chilis
- 1 teaspoon ground oregano
- 1 teaspoon cumin
- 2 teaspoons paprika
- 1 teaspoon chili powder
- 2 teaspoons kosher salt
- 1 cup tomato sauce
- 1/2 cup water
Instructions
- In a large pan brown the ground beef and onion over medium heat. Drain excess fat and transfer beef and onion mixture to the base of the slow cooker.
- Add all the spices, tomato sauce, and water to the ground beef; stir to combine. Place the lid on the slow cooker and cook on low for 3-4 hours.
- Serve the taco meat in hard shells, flour tortillas, or over greens for a taco salad.

Not impressed. Not as good flavor than taco mix that I can do in a skillet in a few minutes. And the beef wasn’t any more tender for all that trouble!
You are so right. You can easily make it on the stove top in no time. Like I said above, I reserve this recipe for when we’re running around with after school activities and having taco meat ready to roll in the slow cooker is an absolute life saver!
