Taco Salads to Beat the Heat
How many of you are avoiding cooking just to beat the heat in the kitchen? You can trust that you are not alone- I’m waving my hand high up in the air. It’s been so dang hot, I just haven’t felt like cooking. We’ve been living off simple meals that can be thrown together quickly and salads are the obvious choice. They’re light, filling and the perfect dinner on a hot summers night. It’s a taco-less tuesday this week as I’ve gathered a handful of gorgeous taco salads from friends around the web to keep the spirit of Taco Tuesday in the air and spark your imagination for this weeks dinner.

I am melting in this heat, and I really need to turn more to salads for dinner to stop me from sweating over the stovetop. What a great round-up of amazing salads!
So many nice salads. Thanks so much.
What a great collection of taco salads, and thanks for including me! I think I could eat some kind of taco salad for lunch every single day and I’d never get tired of it.
