Literally I can’t stop. My husband either. He took one bite and then proceeded to eat an entire jar (they’re small, mind you) like a salad. I have since put it on both grilled chicken and pork tenderloin and it’s dynamite on a grilled hotdog. For reals. I eat like two hotdogs a year and I ate both of them within days of making this relish. Dyno-mite.

SUMMER CANNING TIPS

Like with any canning recipe, wait to make this when your local corn is at its best. When you use in season produce at its peak then you’ll end up with the best result. It’s pretty simple! This corn relish is a great beginner recipe and is straight forward and uncomplicated. It does take a little bit of prep as you have to chop a bunch of veggies but otherwise it’s a very simple canning recipe….my favorite kind! 🙂

HOW DO I USE THIS RELISH?

Like I said above, the corn relish is a no brainer on any grilled meats! It would also be awesome used as a topping for a mixed greens salad- simply spoon some over your favorite salad mix. It would be awesome on a turkey sandwich or in a veggie wrap, as a condiment to scrambled eggs, and as weird as this might sound….try topping it on a baked potato or sweet potato! The ideas are endless!
